Delicata squash half-moon fries

Ingredients:
- 1 delicata squash
- 1 finely diced garlic clove
- 1-2 tbsp olive oil
- Smoked paprika
- Fine herbs of choice (rosemary is my favourite)
- Salt to taste
Instructions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare the squash. Wash the squash. Slice in half lengthwise and scoop out the seeds with a spoon. Cut crosswise into half-inch slices.
- Season. Toss the squash slices with olive oil, salt, pepper, and fine herbs of choice until evenly coated.
- Roast. Spread the slices in a single layer on the baking sheet. Bake for 20–25 minutes, flipping halfway through, until golden brown and tender with lightly caramelized edges.
- Serve. Enjoy on their own or with your favourite dipping sauce.
