Spaghetti squash Ukoy

 

A recipe straight from the Philippines. This side dish is very well known in the Filipino street food scene and traditionally consists of unshelled shrimp, a thick pancake batter and various vegetables. We have created our version of this simple and oh so crunchy recipe!

 
Ingredients

1 spaghetti squash
2 cups of bean sprouts
1 cup of flour
1 cup of breadcrumbs
4 eggs
1 tbsp. fish sauce
1 tbsp. Worcestershire sauce
1 tbsp onion powder
1 tbsp fresh or dried parsley
1 tbsp paprika
2 tbsp. olive oil
A few shrimps

Preparation

  1. Preheat oven to 375 degrees or cook squash in the microwave for 8 to 10 minutes, placing the inside of the squash down. 
  2. Mix flour, breadcrumbs, eggs, sauces, onion powder, parsley, paprika to create the "pancake batter".
  3. Cook squash with the inside down for about 25 min or until a knife can pierce the flesh.
  4. Stir in squash, bean sprouts. Mix well.
  5. In a saucepan with oil, put parts of the mixture forming patties while cooking. Brown well.
  6. Serve with a few shrimp on top of the patties.


To be enjoyed with a sauce made with a mixture of vinegar and garlic mayonnaise.
