Mexican Salsa Verde - made with tomatillos

Salsa verde is a very popular sauce used in Mexican cuisine. Its rich sweet and sour taste makes it a perfect dip for tortilla chips or a condiment for tacos, enchiladas or grilled meats. There are several ways to prepare salsa verde, but this one is the one I like best because it is very easy and fast to make.

Ingredients: 

1 lbs tomatillos
1/8 spanish onion
1 clove of garlic
1 handful of fresh cilantro
1 jalapeno pepper (optional)
salt to taste

Preparation

  1. Remove the husk and rinse tomatillos. Blend all ingredients in a blender until it is a coarse puree.
  2. Heat the salsa in a pot on medium-low heat just until the salsa begins to turn from its original bright light green colour to a slightly green-brown.
  3. Remove from heat and enjoy!
