
Here is a hundred-year-old recipe for potato doughnuts. You will notice that the quantities of the ingredients and the preparation is not very precise. If you try this recipe with our blue potatoes, when raw they are dark purple, cooked they will become blue!
Ingredients
½ cups hot mashed potatoes
½ cups sugar
¼ cup milk
½ tbsp melted butter
1 ¼ tsp baking soda
¼ tsp vanilla
Flour to make a soft dough (1 cup)
Preparation
Mix mashed potatoes, sugar, baking soda and the butter. Add the milk and vanilla. Mix well.
Add flour to make a soft dough about 1 cup
Roll out ½ inch thick and use a donut cutter (or you can use any cookie cutter)
Fry in hot grease. Watch the oil's temperature carefully as you fry and adjust the heat as needed to maintain a temperature between 350°F and 360°F.
Turn them over at least once to cook them equally
When cooked, put them on a rack or in fine sugar to taste.
